Today Poonam Ball from Madhu’s cooks for us a sensational mixed vegetable jalfrezi. This isn’t any ordinary vegetable dish, Poonam adds texture, crunch and a whole lot of spice to enhance the entire flavour. Your taste buds will be zinging after you’ve tried this healthy and fulfilling vegetable based dish.


400g Mixed vegetables (chestnut mushrooms, fine beans, baby corn, carrots, long stem broccoli, red pepper, asparagus, courgette, mangetout)
1 medium Onion, sliced
3 green chilli, sliced
10ml Rapeseed oil
5g Garlic, chopped
10g Salt
5g Kashmiri chilli powder
2g Haldi
3g Jeera
2g Kasuri methi
50g Brown onion paste
100g Tomato paste
10g Green chilli paste
Ginger, julienne for garnish
Coriander, chopped for garnish
