Who says pizza should be boring and unhealthy? This recipe is definitely a keeper thanks to Sonali

Using vibrant green basil and coriander, mixed with cashew nuts and all your desi spices, you can make a flavourful pesto for the base of your pizza. Topped off with paneer and seasonal vegetables of your choice, who knew you could enjoy a healthy pizza?

Ingredients:

For Pizza:
2 x pizza base (shop bought or homemade)
1 block paneer or tofu
Toppings of your choice: onions, asparagus, olives, tenderstem broccoli and chillies

For Coriander Pesto:
20g basil leaves
30g coriander leaves
20 cashews, soaked in hot water for 15 mins (discard water before using)
2 garlic cloves
1/2 juice of lemon
1 tsp ground cumin
1 tsp chilli powder/ green chill (optional)
Salt and pepper to taste
Extra Virgin Olive Oil as needed

Method:
1. Make the coriander pesto by blitzing everything in a blender, add as much olive oil as needed to get to spreading consistency.
2. Pre-heat the oven. Spread the pesto on the pizza base, top with toppings of your choice.
3. Crumble the paneer evenly on top, add a drizzle of olIve oil and bake according to the pizza base you are using. I baked it for 8 mins at 195C.
4. Finish with chopped coriander and devour!!
